This recipe features cashew 'beef' bowls made with tempeh or smoked tofu, deliciously paired with a fresh mango salsa. It's a simple, high-protein meal perfect for lunch.
1: In a large bowl, add the diced tofu, tempeh, and cabbage, add the corn starch and toss to combine. Preheat a large pan with 2 tbsp of olive oil over medium heat. Once the oil is hot, add the tofu mixture and cook for 10 minutes, allowing the cabbage to slightly char.
2: While the tofu mixture is cooking, prep the mango salsa by combining everything in a bowl and mixing. Set aside.
3: In another small bowl, make the sauce by combining everything. Add it to the pan with tofu mixture. It should be nice and crispy by this point. Stir the sauce together so everything is coated. Add the bell pepper and cashews and toss to combine.
4: Build your bowl with the cooked rice, top with the tofu mixture, more sauce from the pan and the mango salsa. Dig in!
