Delicious Shiitake mushroom skewers paired with a vibrant ramp pesto, perfect for spring. The mushrooms are sliced thin and packed onto skewers, brushed with olive oil and seasoning, and grilled to perfection alongside the tasty pesto made from ramps, garlic, and vegan parmesan.

Instructions

1: Slice the mushrooms razor thin using a food processor or a sharp knife. Pack them tightly onto soaked wooden skewers.

2: Brush the skewers with olive oil and sprinkle with salt and pepper, then set aside.

3: In a food processor, add all ramp pesto ingredients except water and process until smooth. Add half the water and process. Adjust with more water if needed.

4: Preheat the grill. Alternatively, prepare to bake or pan-cook the skewers.

5: Grill the skewers for 5 minutes over medium heat, then flip and brush liberally with pesto.

6: Cook for another 5 minutes until golden brown and charred, reapplying pesto during cooking. Serve and enjoy!
