A homemade mushroom white pizza recipe, featuring a creamy cashew sauce, oyster mushrooms, garlic, and a homemade pizza dough, finished with chives, vegan parm, and vegan bacon bits. This recipe is designed for a pizza oven.
1. In a large bowl, add the water, yeast and allow to bubble for 5 minutes. If it doesn’t bubble, throw it out and buy new yeast.
2. Once bubbles start to form, add the flour and mix for 1 minute with your hand. Add the salt and continue to mix until a shaggy ball forms.
3.Turn out onto the counter and knead for 5-10 minutes, until it becomes very smooth.
4.Place in a bowl and cover with a damp towel to rest for 1 hour until doubled in size. Once doubled, divide into 4 smaller dough balls and shape into balls.
5.Preheat your pizza oven until very hot. It should take 30-45 minutes.
6.While it’s preheating, make your cream sauce by adding 1 cup water, 1 cup cashews, salt and lemon to a high speed blender and blend until very smooth.
7.Place the mushrooms and garlic in a small pan and roast in the pizza oven until slightly charred and golden. Set aside.
8.Shape your dough by hand until you get a flat circle. It will take practice.
9.Top the dough with cream sauce, mushrooms and bake in the oven for a minute, checking so it doesn’t burn! Rotate the pizza 180 degrees and continue to cook until golden all over. This will happen very quickly if you have never used a pizza oven before!
10.Once cooked, remove and top with chives, parm and vegan bacon bits. Repeat with the rest of the dough.
11.Pour yourself a glass of wine, you deserve it. Dig in and enjoy!
