A delicious mushroom teriyaki recipe featuring lions mane mushrooms, soy sauce, and maple syrup. This comforting dish is perfect for any meal and easy to prepare, ideal for plant-based eating enthusiasts.
In a bowl, combine soy sauce, maple syrup, ginger and garlic. Add in the whole mushrooms and toss to evenly coat.
Preheat a cast iron over medium heat. Add vegetable oil and place the mushrooms on the pan without overcrowding.
Place a heavier, smaller pan on top of the mushrooms and cook for 3-5 minutes to force moisture out.
Remove the heavy pan and flip the mushrooms, searing on the other side until golden brown.
Remove and slice into bite-sized pieces. Serve with rice and top with remaining marinade or sauce from the pan.
