This easy and budget-friendly Maple Tofu Curry is perfect for a weeknight dinner and makes great leftovers. Substitute tofu for mushrooms or another protein, and enjoy it over rice or noodles.
1: Slice tofu into 4 slabs and score the top of each one.
2: Combine corn starch and curry powder in a bowl. Lay tofu on a baking sheet.
3: Sprinkle curry mixture on both sides of the tofu and drizzle maple syrup over top.
4: Bake at 400°F for 15 minutes, flip, drizzle a bit more maple, and bake for another 15.
5: While tofu bakes, heat ginger with coconut oil in a large pan on medium. After 5 minutes, add the curry paste.
6: Add broccoli and coconut milk, cover, and cook for 15 minutes.
7: In a separate pan, add a splash of oil, green onions, hot sauce, and garlic. Cook for 5 minutes until just crisping.
8: Remove the lid and simmer on low. Add tofu to the pan once it is crispy and serve over rice or noodles. Top with the green onion mixture and enjoy!
