Funfetti Cookies

1: Peel and dice 2 apples, place in a pot and fill with water. Bring to a boil and cook until soft, around 5 minutes. Drain and place in a blender and blend until smooth. (Can sub store-bought if you want).

2: Preheat your oven to 350F.

3: In a stand mixer, or bowl, whisk together the butter and sugar for 5 minutes, until very well combined. Add the apple sauce and vanilla and mix.

4: Add the flour and other dry ingredients and gently fold in slowly. Once a dough forms, add the sprinkles and gently fold in with a spatula.

5: Scoop into even size cookies, I used a 1/2 cup scoop. Freeze at this point or place on a parchment lined baking sheet, flatten with your hand and bake for 12 minutes, or until slightly golden on the edges.
