Fran’s Roasted Sweet Potatoes with Miso Maple Butter and Furikake

This recipe features roasted sweet potatoes topped with a rich miso maple butter, garnished with fresh scallions and furikake. The original social media post contained two recipes, but only this one was fully detailed with complete instructions.
To roast the sweet potatoes, preheat your oven to 425°. Prick the potatoes all over with a fork and cover with olive oil and sea salt. Roast for 30-45 minutes or until tender. To prepare the butter, melt on medium heat until golden brown. Then add the miso and maple syrup and whip until combined. Taste and adjust seasoning if you like. Place the butter in a metal bowl on top of a bowl with ice. Whip your melted butter in the metal bowl until solid again. Place the whipped butter onto a piece of waxed or parchment paper and roll into a log. Allow to chill in the fridge until ready to use. Once the sweet potatoes are tender, cut them open and add a generous portion of the maple butter, garnish with the scallions and furikake on top and enjoy!
