Diner pancakes are unique in their size and texture! They are large, and a sponge 🧽 to maple syrup or whatever corn syrup is on your plate. To me, they are the perfect pancake.
1. Combine the dry ingredients in a large bowl.
2. Add the milk until you’ve reached the right consistency, not too thick, not too thin, just right. You want the batter to shape a nice cake on the pan without too much effort.
4. Heat a large cast iron over medium heat and add 1 tbsp of oil. Add two big scoops of batter and cook until golden brown, flip and cook for another few minutes. Repeat with the rest of the batter. Drown in maple syrup and butter and have a good weekend!
