These crispy eggplant fries are easy to make and can be enjoyed as a snack or a side dish with bulgogi-style sauce. They're coated in a crunchy cracker crust and served with a delicious homemade sauce.
1: Cut 2 medium eggplants into strips.
2: Combine crushed crackers with salt on a plate.
3: In a bowl, add 1 cup of milk.
4: In another bowl, combine 1 cup of flour with salt.
5: Toss eggplant strips in the flour, then dip into the milk, and coat with crumbs.
6: Place eggplant strips on an oiled baking sheet.
7: Bake at 425°F for 15 minutes, flip, and cook for another 10 minutes.
8: While they cook, combine 2 tbsp soy sauce, 2 cloves garlic, grated ginger, 2 tbsp maple syrup (or brown sugar), 1 tbsp chili sauce, a little sesame oil, and a splash of rice wine vinegar in a bowl.
