1: In a small bowl, combine all the hoisin sauce ingredients until smooth. You might need to add a splash of water to get it smooth! Set aside!
2: In a medium sized bowl, add the cut up carrots and cucumber. Pour in the vinegar and salt. Massage gently with your hands. Set aside.
3: In a large bowl, add the dry jackfruit and corn starch. Mix to combine. Preheat a large cast iron pan over medium heat. Add 2 tbsp of vegetable oil and warm for a minute. Add the jackfruit and place a small heavy pan on top. Cook for 3-5 minutes, flip the jackfruit, and repeat.
4: Once both sides are seared, remove the smaller pan and add the hoisin sauce. Mix to combine.
5: Slice your bread, then top with hot pepper spread, jackfruit, pickled veg, green onions, and sriracha mayo. Serve and enjoy!
