California Prune Cake

What you need

cup flour

tsp table salt

cup applesauce

tbsp oat milk

cup sugar

cup brown sugar

tsp baking powder

tsp vanilla extract

tsp baking soda
Instructions
1. Preheat your oven to 350F. 2. Make the topping by combining the brown sugar and butter in a pot and melt to combine over low heat. 3. Line a cake pan with oil and parchment paper. Place enough California Prunes in the bottom, enough to make sure there are no holes for cake batter to squeeze through. Press firmly with your hand into the prunes so they are Pour the brown sugar butter mixture over top and spread out evenly. 4. In a stand mixer, add the 3/4 cup vegan butter and whip with the paddle attachment until creamed. Add the sugar and cream together again. Add the apple sauce, vegan yogurt, vanilla and mix on low until combined. Add the flour, baking powder, baking soda, and salt and mix on low until combined. Add the oat milk to thin the mix out a bit. 5. Pour the batter into the cake pan. Bake for 35-40 minutes. 6. Remove and let cool for 20 minutes. 7.
