Delicious plant-based buttermilk pumpkin donuts made with all-purpose flour, pumpkin puree, and an apple cider vinegar oat milk mixture. They're fried to golden perfection and topped with a sweet glaze. Perfect for any time of the year!
1: In a large bowl, combine flour, salt, pumpkin pie spice, and sugar.
2: In the bowl of a stand mixer, add the pumpkin puree, 2 tbsp oil, apple sauce, vanilla extract, and oat milk mixture. Mix until combined.
3: Add the dry mix into the wet mix and mix on the dough hook attachment until well combined. If it looks wet, add 1/2 cup more flour.
4: Roll out with your hands on a well floured surface. Cut into donuts using a cup of some sort.
5: Heat the vegetable oil to 375F and carefully place the donuts in the hot oil and fry until golden brown. Flip and fry until golden all over. Remove on a wire rack.
6: Combine the glaze ingredients, you might need to add a splash of milk to get the right consistency. Top the donuts with the glaze and dig in!
