This Blueberry French Toast Casserole is a cozy holiday breakfast featuring sourdough bread layered with blueberries and cream cheese, topped with a banana and oat nog mixture. Prepare it ahead of time and bake it on Christmas morning for a super easy and delicious treat.
1: Grease a casserole dish with oil and set aside.
2: In a blender, combine bananas, oat nog, milk, vanilla, cinnamon, nutmeg, ginger, and salt. Blend until smooth.
3: Add the bread to a big bowl and pour over the banana mixture. Toss to combine and pour half the mixture in the casserole dish. Add a few spoons of cream cheese and some of the blueberries.
4: Top with the remaining bread mixture and the rest of the cream cheese and 1 cup of blueberries. Cover with tinfoil and let sit in the fridge overnight, or for an hour if you're tight on time.
5: When ready, preheat your oven to 375F and bake, covered for 30 minutes.
6: While it’s baking, make the blueberry sauce by adding the remaining blueberries in a small pot and add the fresh ginger and cinnamon. Cook on low until thickened naturally, about 10 minutes.
7: Serve up the make ahead casserole and top with the blueberry sauce, maple syrup and powdered sugar.
