Delicious black bean and sweet potato burritos that are perfect for meal prep and can be easily stored in your freezer for quick lunches or dinners. These burritos are healthy, plant-based, and simple to make.
1: Preheat your oven to 425F.
2: On a parchment lined baking sheet, place the diced up sweet potato on the pan and drizzle with olive oil and a big pinch of salt. Slightly toss to get evenly coated and then bake for 20-30 minutes, tossing occasionally to prevent burning.
3: Once tender, remove and allow to cool.
4: In a food processor, add the beans, onion, garlic, salt, cumin and olive oil. Puree until smooth.
5: Using your 1/2 cup Souper Cubes, place 1/4 cup of the black bean filling in each, place some vegan cheese on top, and then top with the diced sweet potato.
6: Store in the freezer for when you want a quick and healthy lunch or dinner.
7: When ready to eat, reheat in a covered pot with a splash of water over low heat, or the microwave.
8: Build your burrito with lettuce, avocado and hot sauce, or whatever you enjoy in your burrito!
