Deliciously simple Bean 'n Cheese Burritos filled with a flavorful bean mix and topped with a creamy queso. Perfect for meal prep and can be stored in the freezer.
1: Preheat your oven to 425F. On a baking sheet, place the cabbage, spices and olive oil. Mix to evenly coat. Roast for 15 minutes, slightly charred.
2: Add the bell pepper, corn, beans and shredded cheese. Bake for another 10 minutes, or until your brand of cheese is melted.
3: In a small pot, add the diced potatoes, and carrots and fill with water, bring to a boil and cook until tender. Roughly 12 minutes. Drain and set aside.
4: In a blender, add the cooked potatoes, carrots, and the rest of the queso ingredients. Blend until smooth!
5: Fill your large tortillas with the bean cheese mixture, top with queso and more pickled jalapeños. Roll tight and store in the freezer, or dig in right away!
