Toddler Tofu & Veggie Bites

Just 3 ingredients: vegetable, tofu, corn starch. I used Sweet Potato, Cauliflower (with turmeric for colour), and broccoli! His favourite so far is the sweet potato.

1. Steam or boil the veggies until soft, place each veggie one at a time in a food processor and process. Set aside. 2. Boil the tofu for about 2-3min. Then squeeze the tofu with a kitchen towel to remove even more moisture. 3. Mix everything together with 1-2 tbsp of corn starch. The broccoli and cauliflower needed more corn starch to stick together. Make sure you really crumble the tofu so there aren’t large chunks! 4. Bake at 350F for 15 minutes, let cool and let your toddler dig in. Store these in the fridge for 3-5 days.View original recipe
