1. In a bowl, combine the maple syrup, soy sauce, liquid smoke and paprika. Place the sliced tempeh into the bowl and toss to combine. Set aside to marinade while you prep the rest of the ingredients.
2. In a blender, combine all the hollandaise sauce ingredients and blend until very smooth. Place in a small pot to warm over low heat.
3. In a large pan, add a tbsp of olive oil, and cook the onions, spices and smoked tofu on medium heat for 5 minutes with a big pinch of salt. Stir and then add the tempeh (reserve the marinating liquid). Cook so everything is golden brown. Stirring constantly. Add the bell peppers and shredded cheese. Stir to combine.
4. In a small bowl, add the avocado and mash it up with a pinch of salt.
5. Fill your burritos with the tofu tempeh filling, top with lettuce, mashed avocado, and the hollandaise sauce, fold up and place the tightly wrapped burritos on a pan to get everything toasty! Serve and enjoy!
