1. Combine the fully cooked and cooled beet, apple sauce, 1 cup of yogurt, and oats in a blender. Blend until very smooth. If the batter is too thick, add more yogurt; if it's too thin, add more oats. 2. Fry the pancakes on a large pan over medium-low heat. Cook until golden on both sides, then flip. 3. Turn your oven to a 'keep warm' setting. Place cooked pancakes in the oven and repeat the frying process until all batter is used up. 4. Top the pancakes with melted chocolate, strawberries, and maple syrup, if desired.
